Process: Light oxidized, rolled and dried leaves.
1. View
The dry leaves are rather small and of a fresh yellow/green color. The brew's color is a bright yellow. This is a sign of a good oxidation and high concentration level. It has a very good transparency. The open leaves are small and have a fresh green color with oxidation marks on the edges.
2. The scents
The dry scents are typical of Alishan. Soft fragrances of high mountain pine trees and high mountain forest. The brew has beautiful floral and fruity notes.
3. The taste
The taste of this Oolong is mellow, powerful and refined. Despite a 6 minutes test brew, there's no bitterness or astringency! It has a good aftertaste and feels sweet and fruity.
Conclusion: The young and energetic farmer of this RuiFeng farm continues to produce outstanding high mountain Oolongs. This year's harvests were delayed by a week due to the cool spring. This is the batch of the third day of harvest in Ruifeng. It has a great balance of freshness and sweetness. It's neither too lightly oxidized, nor strongly oxidized (so that it can be roasted).
